ROLE:
The role of the Restaurant Manager is to be ultimately responsible for the entire operation of his / her sites, in accordance with company standards.
The Restaurant Manager effectively manages, develops and delegates to their Managers, Head Chef & Sous Chefs and Supervisors and all key staff.
REPORTS TO:
The Restaurant Manager reports to, and works with, the General Manager of City Suites to maintain, drive and develop the principles and values of the company in all areas including, but not limited to, the following:
OVERVIEW OF RESPONSIBILITIES AND DUTIES
PRODUCT & SERVICE QUALITY:
Leading by example in all areas of product knowledge, consistency and pride in standards, timings, presentation and quality
Demonstrating full commitment to the menu and wine knowledge and 100% focus on achieving all service requirements
To ensure that sites open, operate and close to the required standards
Working with all staff to ensure development of customer relationships and creation of loyal regulars
Commitment to Company standards of presentation for staff, site and printed matter.
CREATIVE DEVELOPMENT & BUSINESS PROMOTION & SALES:
To have a pro-active view towards promotions and sales and up selling
To maximise sales with staff through suggestive selling and through the conducting of daily briefs & ongoing coaching and training
Ongoing research regarding new trends in the market
Driving and managing marketing, promotions and events
HUMAN RESOURCES, RECRUITMENT, TRAINING & RETENTION:
Full commitment to service standards & training plans for new employees
Management appraisals, training and development plans & team building
Effective communication and delegation to all members of the management team
Driving management and department meetings and staff briefings
Ensuring department managers are fully effective and productive
To comply with all legal and good practice in relation to staff grievance and disciplinary situations
To work with the Operations Manager and liaise with the People Department in relation to all employee welfare issues
FINANCE & ADMINISTRATION:
To be responsible for accurate and secure cash management of the business
To develop suitable strategies that optimize restaurant capacity
Cost of Sales analysis and pro-active management of potentials using sales mix reports
Understanding and working towards all cover growth targets for the business
Wage management - staffing & rota planning to ensure productivity targets are achieved and costing, productivity and feedback is accurate and timely
To be responsible for Food and Beverage Cost of Sales- F&B Shop analysis and stock take management
TECHNICAL SKILLS & GENERAL AND ADVANCED LEGAL COMPLIANCE:
Responsible for - all Licensing, Employment, CCTV, Fire and Health & Safety legal compliance
To adhere to all company rules, regulations and procedures
Supervision of Head Chefs kitchen cleanliness, Food Safety and Food Hygiene
Health & Safety management including legally required training/risk assessment adherence and equipment maintenance (internal and external)
To review and correct where necessary adherence to agreed systems
Contribution to budgeting decisions with the Finance Director
Profit and Loss management, including Occupancy and Business Cost tracking
Financial and stock security of all aspects of the business
