Job Description Join the kitchen brigade at one of South Wales’ most iconic venues.

We’re looking for a talented, driven Sous Chef to support Head Chef, Ben Mathias, in delivering consistently exceptional food at The Priory. With a focus on seasonality, quality, and precision, you'll help lead the team through busy services, special events, and everything in between.

What You’ll Do Support the Head Chef in all aspects of kitchen leadership
Run smooth, efficient services with a calm and focused approach
Lead and develop junior chefs, fostering a culture of high standards and teamwork
Help shape menus, daily specials, and supplier relationships
Maintain exceptional food safety, hygiene, and organisational standards

What You’ll Bring Proven experience as a Sous Chef or strong Junior Sous ready to step up
Passion for great produce, bold flavour, and modern British cuisine
Leadership qualities—calm under pressure, hands-on, and supportive
A keen eye for detail and consistency
Knowledge of kitchen systems, cost control, and compliance
